Nora Pouillon: Pioneering Organic Chef

Organic chef Nora Pouillon discusses her life and her book My Organic Life: How a Pioneering Chef Helped Shape the Way We Eat Today, a story of an unheralded culinary pioneer.

Pouillon founded America’s first certified organic restaurant, Restaurant Nora, in 1979, in Washington DC. It has been a hot spot for reporters, celebrities, and politicians from Jimmy Carter to the Obamas.

Pouillon grew up on a farm in the Austrian Alps and later in Vienna, surrounded by fresh and delicious foods. When she moved to the US in the 1960s, she was horrified by the American culinary culture of hormone-bloated meat and unseasonable vegetables. First as a cooking teacher, then as a restaurant owner, and as a premier organic restaurateur, changed many Americans’ relationship to food.

In 2010, the Organic Trade Association honored Marquez with the Organic Leadership Award for her outstanding initiative and devotion to organic.
